Thirsty Thursday?- Day 10
My amazing husband gave me this kindle for Christmas, and I love it. I debated with myself for a long time as to whether I wanted a Kindle or not, afterall who doesn't love the smell of a new book... but when I realized that my books were going to start overflowing our office, I decided to ask for a Kindle. Sometimes I walk into a bookstore to get a hint of that new book smell....I kid kid.. ok no really I do, maybe they should make a "New Book" scented air freshener.

I miss Jamie! - Day 8
Jamie and I used to work on the same project at work, until I was transferred... sad face. We used to have lunch together everyday, and I miss it. It's harder for us to see each other now because our offices are about 10 min apart :( Bleh, but we make the most of our time together and laugh like its our job. Anyway, I love her, so I'm dedicating my picture of the day to her!

I'm bad at taking pictures Day 6
Chicken Enchilada Pasta, Whaaat?

Oh man, this chicken enchilada pasta was amazing, it used the concept of stuffed shells, substituting a refried bean, and veggies mixture instead of the traditional ricotta cheese business. I used fat free refried beans, and basically the mixture was: onion, refried beans, red pepper, jalapeño and cheese. The hardest part was stuffing the shells, they are so darn slippery.
I have a lot of this leftover, seeing as how the recipe serves 8-10 people, so if you want some (Splory) come over! hehe. Here is the recipe:
Chicken Enchilada Pasta
Ingredients
2 cups cooked, diced chicken
1/2 packet of taco seasoning
salt and pepper
3 peppers of your choice, diced
1 red onion, diced
2 cans red enchilada sauce
1 lb jumbo shells, cooked
2 cups shredded cheese
1 15 oz can of refried beans
1/4 cup green onions
olive oil
Directions:
Sauté onions and peppers in olive oil until soft. Add in chicken, beans and taco seasoning and warm through. Add in 1/2 cup of enchilada sauce and another 1/2 cup of cheese. Remove from heat.
Spread about 1/2 cup of enchilada sauce on the bottom of a 9x13 casserole dish. Stuff cooked shells with your chicken/bean mixture. Pour remaining sauce over top and bake covered for 30 minutes. Top with cheese and bake uncovered for another 5 minutes. Top with green onion, sour cream and tortilla chips (optional)

Sunday Rainy Sunday

After we got back from my mom’s house, it was dinner time, and we had a rotisserie chicken I had gotten from Giant on Friday that we still needed to eat. So we decided to make buffalo chicken sandwiches, but we didn’t have any buffalo wing sauce. Erik put together a really yummy sauce, made from: Texas Pete’s hot sauce, Worchester sauce, brown sugar, butter, and a dash of honey. You can see the picture of him cooking it in my previous post, but here is the chicken cooking in the delish sauce:

It was a bit too spicy for me, so Erik had to eat my sandwich too, but here they are:

After dinner we finally got to watch “The Social Network”, I know we are super behind on the times, which is mainly because we are obsessed with the show “The Wire” and have been getting that with our Netflix account, but I digress... The Social Network was a really good movie, but I am really glad it didn’t win Best Picture of the Year. So far we have seen “Black Swan” and “The Social Network”, our goal is to see all of the movies that were nominated.
